[Classes 14 (i) and 49.] Milk is agitated in a vessel while carbon dioxide is forced in under a pressure of 2-3 atmos.; excess gas is then allowed to escape, and the agitation with gas repeated while fresh gas under pressure is being introduced. Small proportions of fruit juice and white of egg may first be added to the milk. Suitable apparatus comprises a container a fitted with a gas pipe d and a receptacle c for cooling medium fitted in the lid. A three-way cock k allows withdrawal of the aerated liquid along the pipe d. The receptacle is preferably mounted in a power-driven swing-trestle.
