Abstract

Yeast is prepared by fermenting with aeration solutions of carbohydrates, the minimum value of the yeast concentration of which is about 8 per cent by volume, and adding fresh raw material intermittently or continuously after the attainment of the desired degree of multiplication of the yeast, whereby the yeast concentration is never allowed to fall below the said minimum value. The yeast concentration is preferably repeatedly reduced to the initial value by the additions made, and a proportion of the liquor of higher yeast concentration is drawn off prior to the addition of fresh raw material, fermentation being continued in the withdrawn liquid. An example is given in which three fermentation vessels are used. A diluted molasses solution is fermented in the first vessel with a mixture of press yeast from a previous operation and fresh mother yeast, the second vessel is used for completing the fermentation in the withdrawn portions, and the third is used for ripening without aeration.
