Treatment by heating; treating with air and gases.-A wheaten cereal is heated without subsubstantially increasing the moisture content and under atmospheric pressure in a practically motionless' atmosphere at a temperature lying between 70‹ and 90‹ C. for such a length of time that from 5 to 10 per cent of the gluten content of the flour becomes non-retainable in a washing test. The resulting product is mixed with ordinary flour in the proportions 0.5 to 2 per cent. Oxygen may be excluded during the treatment. but indifferent gases such as carbon dioxide or vapours may be present. The process is applicable to wheat as well its intermediate and final milling products.
