Cutting slices in succession.-In a slicing- machine having a reciprocating table, a rotary knife and chain gear driving the knife, the holder comprises a trapezoidal pillar having a part U-shaped in cross section, and a part cast in one piece therewith, triangular in section, which latter part serves as a slice deflector and a guard for the knife driving chain. The holder is hollow and contains the knife driving gear. The axis of the lower sprocket of the knife driving gear is preferably not directly below the knife axle, thus effecting a saving of space and making it possible to use an entirely flat front guard plate. One of the courses, preferably the pulling course of the chain may be vertical. As shown in Figs. 3, 6, the frame 1 is integral with a depending portion 3 and a slice plate 4 supported by flanges 5, the sprocket 20 and shaft 19 being within the frame and fully enclosed. The guides 7 of the table 6 are supported by brackets 8 cast on the frame 1, the brackets being connected by a web 9 which forms the front wall of the frame, divides the slice plate from the remainder of the machine and prevents scraps of meat from accumulating below the table 6 and inside the frame. The knife support 11 is secured by bolts to the end of the frame remote from the flywheel. The bush 13 for the knife axle is held by plummer blocks 15 and bolts, and the sprocket 18 is preferably placed close to the knife. The trapezoidal support is shown in section in Fig. 5. It consists of a U-shaped part 23, 24, Fig. 6, and a triangular part 25, 26 integral therewith. The plate 25, as shown, has a flat vertical part joined to a end part 26, bent over towards the knife, but it may be in the same place as the part 26 which latter is so shaped that it merges gradually into the rib 9. A gap 27 is provided for the knife edge and the parts 25, 26 rest on the plate 4. The support has a flange 28, Fig. 5, and a low back wall, 29, Fig. 3, to prevent scraps from falling into the support. A glass or earthenware cover may be placed on the plate 4.
