Frying-ranges; condensation-collectors.-A frying-range comprises conduits extending from the frying chambers and through cooling tanks to chambers at the sides of, and communicating with, the main chimney flue, the conduits and side chambers being provided with sumps for collecting the fat-impregnated condensing steam. In the range shown, each of the covers 31 of the frying-pan 2 is formed with a tapered extension 33 to which is attached a conduit 34 passing through a water-tank 37 and leading to a vertical chamber 35 at the side of, and open at the top to, the dummy flue 36. A detachable sump 40 is provided at the bottom of the chamber 35, together with a sump 46 sliding on bearers 47 beneath a shoot 45 connected to the conduit 34. A hinged lid 49 closes the orifice of the extension 33 of the pan cover when the range is not in use. In the case of gas-fired ranges, where the fat is not contaminated by soot &c., the bottom of the flue 36 is of hopper formation and provided with a pipe 55 to lead fat collecting in it to a sump 56. Above each of the pan covers is mounted a fish-box 4, the hollow bottom 13 of which is of trough formation and traversed by tubes 26 through which fat passes to an insulated trough 28, from which it returns by a pipe 29 to the pan 2. In the range shown an air-heating chamber 11 is provided over the centrally-arranged smoke-box 6 and below the chip-box 5, the air from which passes by pipes 12 to the spaces in the hollow bottoms 13 of the fish-boxes in order to keep the contents hot. Air enters the chamber 11 by openings at the back, and passes beneath a corrugated and inclined baffle plate 18, or between a pair of baffle plates, to the front of the chamber, returning over the baffle to the rear of the chamber and thence to the pipes 12. The range may be heated by gas burners 8, as shown on the left-hand side of Fig. 6, in which case a burner such as that described in Specification 236,631 is preferably used, or it may be provided with fireplaces for solid fuel, as shown on the right-hand side of Fig. 6.
