Abstract
20,766. Vasey, S. A. Sept. 10. Proteins. - Soluble protein is obtained from insoluble albuminous matter by dissolving it in dilute caustic soda or potash, adding a suitable clarifying-agent to remove the fat, converting the said agent into insoluble carbonate by means of carbon dioxide or ammonium carbonate or both, and subsequently converting any excess of soda or potash into phosphorus or other salts by the addition of one or more of the oxyacids or acid salts of phosphorus, or of other similar acids. Suitable acids and acid salts are phosphoric acid, acid calcium phosphate, sulphuric, citric. tartaric, and malic acids, and any other acid which forms a more or less insoluble calcium salt. As clarifying- agents lime, strontia, or calcium chloride, acetate or nitrate, &c. may be used. Instead of employing caustic alkali, a mixture which gives rise to it, such as alkali carbonate and lime, may be used.
