Abstract
A substitute for common salt is produced by forming an ammonium salt of an aliphatic hydroxy-acid, or a salt of an aliphatic hydroxy-acid with an aliphatic base which contains one or two amino groups and two or more hydroxy groups in the molecule, the salt being precipitated or crystallized out in admixture with an additional substance which obviates the acid flavour of the salt and brings out the desired salty flavour, for example another of said salts or an indifferent or neutral substance such as lactose or soluble starch. Where two of the salts are used they may be formed simultaneously and evaporated to dryness or precipitated out by alcohol, acetone &c., or the alkaline earth salts of the hydroxy-acids may be reacted with ammonium oxalate or sulphate and, after filtration, the filtrate concentrated and the salts precipitated by adding alcohol, acetone, &c., together with a little strong ammonia. Where the additional substance is not one of the salts it may be dissolved in the filtrate containing a single salt and the filtrate evaporated and the salt and additional substance precipitated, e.g. by alcohol, &c. In examples, a solution of tartaric and malic acids in alcohol is saturated with dry ammonia gas and the precipitated salt mixture separated, or the reaction may be carried out in water and precipitation effected by adding alcohol and ammonia; calcium gluconate and anhydrous calcium citrate are reacted in solution with ammonium oxalate, the filtrate is separated and the salt mixture precipitated with alcohol and a little ammonia; an aqueous solution of diethanolamine, malic acid and a solution of gluconic acid are mixed and the solution obtained evaporated and the salt mixture precipitated with alcohol and a little ammonia; calcium gluconate is reacted with ammonium oxalate and the filtrate separated and lactose dissolved in it and is then concentrated and the mixture of salt and lactose precipitated by adding alcohol and a little ammonia.
