Abstract

189,960. Lewis, A. C. Nov. 4, 1921. Meat-scering knives.-A device for scoring pork comprises a number of blades 4 rigidly fixed in a head 2 projecting from a handle 1 and carrying a plate 7 adjustably mounted on the head to vary the depth of cut, the blades projecting through slots in the plate. The blades project at right angles to the head and are fixed in grooves therein by a pin 5 threaded through holes in the blades and head and secured by nuts; a strip of metal 6 passing around the sides and end of the head may bear against the edges of the blades and be secured by the pin 5. The plate 7 is pivoted at 13 to the head, has slotted lugs 9 engaging a pin 10 and is secured in its adjusted position by a nut 12 on the pin. The blades instead of being arranged in individual grooves in the head, may be provided with adjustable distance pieces threaded over the pin 5.
