Flaying-knives.-A cutter for removing rind from bacon or ham comprises a forked, resilient handle A wherein the distance between the guide A<2> and the cutter A<3> is adjusted by a screw B whch also serves to hold the cutter A<3> in position on the prong A<1>. The cutter may be provided with flanges to allow it to slide on the prong A<1>, or it may be integral with the prong A<1>. The edges of the guide and cutter are rounded, as shown in Fig. 3. A disc cutter may be used, and the screw B may be replaced by a notched bar connected to one prong and passing through a hole in the other.
