Proving-appliances.-Bread is proved and baked in one chamber which is traversed by an endless conveyer b of the flat sole type. The proving-portion of the chamber is heated by elements disposed beneath the sole, and the baking-portion is provided also with heating-elements above the sole. Outlets f, i co-operate with flaps g, h to regulate the atmosphere and temperature of the zones and also to adjust the relative lengths of the proving and baking portions. Gas burners, steam pipes or hot-air flues may be used for heating. The sole may be horizontal throughout or inclined in places, guide wheels, running on tracks, being provided to support the conveyer in its path. The return run may be below the baking and proving chambers as shown, or may be entirely or in part through the chambers. A discharge conveyer e is provided.
