Abstract

In the production of milk chocolate masses, the roasted cocoa nib is finely ground and, with addition of cocoa butter, lecithin, sugar and milk powder, is kneaded, rolled, homogenized and refined. In order to achieve lower use of energy and machinery despite unavoidable batch mixing and to relieve the homogenisation phase from the necessary expulsion of excess water and undesirable aromas, the milk powder containing its water portion and its undesirable aromas is added to the cocoa mass from which all the vapour has not yet been removed and to which sugar has been added and this is collectively subjected to a thin layer treatment. The plant for carrying out the process is distinguished in that a first batch mixer (3) is provided upstream of at least one part of the three-stage thin layer treatment device (4) and a second batch mixer (3') is provided downstream, with intermediate connection of a continuous kneader or a batch mixer (5) and at least one grinding device (7). <IMAGE>
