Abstract

1509721 Baked potato products M J WILLARD 7 April 1975 [10 April 1974] 14111/75 Heading A2B A re-heatable baked potato product is made by forming an outer layer of a cohesive mixture containing baked potato solids around a core of cooked potato mash. The mixture may be made by grinding baked potato skins and combining with dehydrated mashed potato, cooked potato, thickeners or egg solids and the core may comprise the interior of a baked potato, to which milk, butter and seasoning may be added. The product may be formed by extrusion and the outer layer may be firmed by frying in oil or baking prior to freezing the product for storage.
