Abstract
1482065 Shaped starchy foodstuffs GENERAL FOODS CORP 10 Feb 1976 [10 Feb 1975] 05227/76 Heading A2B A shaped starchy foodstuff is made by rehydrating a dry particulate starchy foodstuff e.g. potato, rice, macaroni, wherein 80% of the particles have a size greater than 40 mesh U.S. standard and using tapioca starch as a binder. The tapioca starch may be ungelatinised, in which case it is mixed with the starchy foodstuff either before or after rehydration in quantity such that the final shaped foodstuff contains 5-20% tapioca starch, and is then partially gelatinised before shaping by heating to at least 125‹F. Alternatively pregelatinised tapioca starch modified by clearing the starch granules may be used, in a quantity of 1-15%. The shaped foodstuff may be frozen, optionally after deep-fat frying. Shaping may be carried out at 32-150‹F. Onions, eggs, butter, cheese, tomatoes and sour cream may also be included.
