Abstract

1,142,151. Soup and sauce mixes. GENERAL FOODS CORP. 15 Feb., 1966, No. 6664/66. Heading A2B. A dry powdered food mix capable of being made into a cream-like soup or sauce in 10-60 seconds in water above 180‹F., comprises ungelatinised starch of particle size less than 200 mesh U.S. Standard Sieve, having a gelatinisation temperature of 135‹-165‹F. and being coated with a fatty hydrophobic substance which delays hydration of the starch on reconstitution while imparting flavour to the reconstituted mix, and other food solids having at least 55% of the particles between 40 and 100 mesh U.S. Standard Sieve. Starches which may be used include potato, rye, water chestnut and Lotus Root starches. The coating material may be butter, margarine, chicken fat, hydrogenated cottonseed oil or hydrogenated vegetable oil. The mix may comprise non fat milk solids, hydrolysed starch, wheat flour, corn, chicken, onion powder, celery powder, carrots, parsley, tomato powder, pea powder, mushroom powder, sugar carboxymethyl cellulose flavours, condiments and spices. The examples disclose chicken soup, vegetable soup, pea soup and mushroom soup mixes.
