Abstract

A potato snack is prepared by mixing potato solids with water to form a dough having between 40% and 50% solids by weight, and including sufficient available free gelatinised starch to cause the dough to expand at least 1.6 times when cooked and sufficient ungelatinised starch to prevent expansion greater than 3.0 times when cooked, extruding a piece from the dough into hot cooking oil and cooking the piece at a sufficient high temperature and for a sufficient time to cause the piece to expand to a thickness between 1.6 and 3.0 times that of the pieces prior to cooking and removing from the oil. Suitable potato products are potato granules, potato flakes, potato flour or diced dehydrated potatoes. The potato product may also contain pre gelatinised starch to improve the cohesiveness of the dough. A flavoured product may be obtained by mixing with the dough, a flavourant such as onion powder. The dough may be formed into a strip or piece having a closed ring cross section, by extrusion. The extruded piece may be cooked by dropping into cooking oil maintained at a temperature of 330‹F to 400‹F, and fried for 1 to 3 minutes.
