Abstract

1321889 Snack food NATIONAL BISCUIT CO 6 July 1970 [16 July 1969] 32689/70 Heading A2B A hydrated mixture of cereal or vegetable flour, in particular corn meal, condiments, and water, for example prepared by dissolving condiments including sugar salt and soda in water and mixing with corn meal for a time sufficient to permit complete absorption of the solution to form the hydrated mixture, is kneaded in a confined space under pressure while applying sufficient heat to gelatinise it, extruding, preferably in excess of 212‹F, into the ambient atmosphere in the form of one or more puffed strands, which are reformed and recompressed into a homogeneous mass, which is then extruded into the ambient temperature in the form of a strip which is transversely severed into pieces and dried to a moisture content of 7-12 wt. %. If desired prior to severing the strip may be bent at spaced intervals along its centre line to form transverse folds, the strip then being severed at and between the folds to form scoop-like pieces, which prior to drying are subjected to moving hot air at about 200‹F to form a skin. The dried product may be deep fat fried. Fig. 5 shows the preferred fried snack product.
