Abstract

1416010 Refining crude wine by electrodialysis MORINAGA MILK INDUSTRY CO Ltd 14 Aug 1974 [29 Dec 1973] 35834/74 Headings C6E and C7B A refining treatment for wine comprises introducing wine to both the dilution and concentration chambers of an electrodialysis apparatus, operating the apparatus so that the potassium concentration of the wine in the dilution chamber falls to below 500 mg./litre and the potassium content of the wine in the concentration chamber is increased into the range 1000 to 2000 mg./litre, cooling the wine from the concentration chamber to below 10‹C and adding tartaric acid crystals to adjust the pH into the range 2.8 to 3.2 to precipitate tartar, separating the tartar from the wine and admixing said wine with wine emerging from the dilution chamber of the electrodialysis apparatus in a ratio such that the potassium content of the resulting mixture is below 500 mg/l, preferably below 400 mg./l. The dilution and concentration fractions are continuously circulated through the appropriate chamber(s) until the stated potassium contents have been achieved and in practice they are recombined in the same ratios as those in which they were initially divided viz. 1.5-3.0: 1, respectively. The electrodialysis is conducted at temperatures below 50‹C, preferably in the range 20-25‹C. The Examples 1 and 2 are directed to the treatment of crude white and red wines, respectively, in apparatus of specified dimensions, the volume of wine supplied to the dilution chambers being twice that supplied to the concentration chambers.
