Abstract

1403086 Whey protein COCA-COLA CO 25 Aug 1972 [1 Sept 1971] 39712/72 Heading C3H At least a portion of the casein and milk fat is removed from whey from bovine milk, then the whey is pasteurized at below its thermal denaturization point, cooled and filtered through diatomaceous earth, ultrafiltered with water injection, then contacted with a strongly acidic cation exchange resin to give a whey protein concentrate at pH <3À8. The whey is preferably heated to 37‹ C. after passage through the diatomaceous earth but before ultrafiltration, which is performed at 100-300 p.s.i., then covered to 5‹ C. for ion exchange. The product may be dried. A physiologically acceptable acid may be added to the concentrate, to lower the pH to 2À7. The preferred concentrate has a mineral salt concentration of 0À2-0À5% w/w, a total microbial count of <10<SP>8</SP>/ml and a viable microbial count of 10-10<SP>2</SP>/ml.
