Abstract
1360465 Jelly-like foods TAKEDA YAKUHIN KOGYO KK 16 Nov 1971 [21 Nov 1970] 53120/71 Heading A2B [Also in Division C3] Jelly-like foods, for example fruit or milk jellies or sherbets enclosed in a jelly shell, having an elastic gel skin and a pasty or liquid core, may be made by maintaining a 1.5-6% w/v suspension of a polysaccharide, which is thermally gellable in a suspension not lower than 1% concentration, and which usually consists of #-1, 3-pyronoglucose units, in a mould of such dimensions that it can be accommodated in a cube with sides of from 5-30 millimetres inside length, externally heating to 60-120‹C for up to 300 seconds, and cooling. The skin preferably comprises 55-88wt% of the product. Examples relate to jelly balls with a liquid core and ice confections.
