Abstract

1344518 Esters DYNAMIT NOBEL AG 3 May 1971 [2 May 1970] 12625/71 Heading C2C [Also in Division A2] Esters of partially acetylated tartaric acid with partial glycerides of one or more saturated fatty acids (14-22 C), monoglyceride content 55-65% and iodine number below 5, which contain 0À91-1À8 mol of tartaric acid residues and 1À8-3À4 mol of acetic acid residues per mol of partial glcyeride are prepared by reacting the partial glyceride with (a) at least partially acetylated tartaric acid or an ester-forming derivative or (b) tartaric acid or an ester-forming derivative thereof under acetylating conditions to form solid, free flowing pulverulent products. Diacetyltartaric anhydride and tartaric acid, or mixtures of diacetyl tartaric anhydride and monoacetyl tartaric anhydride or solutions of diacetyltartaric anhydride and monoacetyltartaric anhydride in acetic acid may be used to react with the partial glyceride. The products may be used as baking emulsifiers.
