1282409 Deep-fried potato products ELECTRO-FOOD AB 26 May 1971 [28 May 1970] 17319/71 Heading A2E In the preparation of deep-fried potato products wherein prior to deep-frying the potatoes are subjected to pretreatment including heating in water, the potatoes are heated in the pretreatment by passing electric current directly through the water by means of electrodes immersed in the water. The potential is preferably 0.2-20 v/mm, and the potatoes may be heated to sterilisation temperatures.
