Abstract

To obtain gelatin, ossein or meat trimmings or scraps are subjected to the action of an enzyme originating from cultures of Streptomyces fradiae Nos 1998 or 2019 from the Paris Museum of Natural History, in aqueous phase; the insoluble phase is separated off and the gelatin is extracted from it with hot water. The gelatin finds use in the food industry.
