1,262,186. Continuous beer fermentation and maturation. FORSCHUNGSINSTITUT FUER DIE GAERUNGSINDUSTRIE ENZYMOLOGIE UND TECHNISCHE MIKROBIOLOGIE. May 17, 1969, No.25267/69. Addition to 1, 160, 297. Heading C6E. The method for effecting continuous fermentation and maturing of beer wort described and claimed in the parent Specification is improved or modified in the following respects: the beer wort and yeast are passed through propagation tanks prior to their passage through the battery of fermentation tanks, between the fermentation and maturing stages the beer wort is cooled and part of the yeast is separated out and returned to the propagation tanks, fermentation is carried out in two stages using series-connected tanks in the first stage and parallel-connected tanks in the second, and parallel-connected tanks may be used for the maturing. Corresponding improvements in or modifications of the apparatus are also described and claimed.
