1300355 Kefir VSESOJUZNY NAUCHNOISSLEDOVATELSKY INSTITUT MOLOCHNOI PROMYSHLENNOSTI VNIMI 14 May 1971 [9 Nov 1970] 15065/71 Heading A2B Defatted milk is pasteurised, cooled and inoculated with Kefir grains in a weight ratio of 1 part of yeast to 30-50 parts of milk, the mixture being stirred for 1-10 minutes every six hours (starting from the inoculation), and separating the grain from the finished fermenting sour.
