Abstract

1,228,175. Preserving pulses. UNILEVER Ltd. 9 Oct., 1968 [12 Oct., 1967], No. 46543/67. Heading A2D. Pulses, such as peas and broad beans, are dried by (a) freeze-drying the pulses to remove 5 to 60% of their moisture content, (b) contacting the partially freeze-dried pulses with an aqueous sugar solution, and (c) subjecting the sugared pulses to a further drying treatment, e.g. by air drying at 50‹C. or by freeze-drying. Preferably the skins of the pulses are ruptured before drying by slitting or pricking. The sugar solution concentration preferably lies between 20 and 40%, and the solution may include minor amounts of sodium chloride, sulphite and carbonate. The pulses are blanched before drying.
