Abstract
In preserving onions, without heating and without preservatives such as vinegar and alcohol, freshly peeled onions are cut into 1-10 mm. pieces with minimum damage to the cells and are treated with a substance inhibiting activity of the onion enzymes. Such substance may be one or more of: sodium chloride, a thickening agent, e.g. pectin, gelatine, tragacanth or an alginate, ascorbic acid, citric acid. A flavonoid, e.g. rutin, may be incorporated.
