Abstract
1,211,833. Wheat farina. QUAKER OATS CO. 20 Jan., 1969, No. 3235/69. Heading A2B. An instant wheat farina product, which can be reconstituted for eating by simply adding water and mixing, without any cooking step, is prepared by denaturing wheat farina by heat-moisture treatment, mixing 0.1-10 parts by weight of a thickening agent which is capable of hydrating rapidly with water, is edible, and is not completely degraded by highly ionic substances, and 50-300 parts of water with 90-99.0 parts of the denatured farina, cooking this mixture by forming it into a thin sheet on an internally heated rotating drum dryer, the sheet being such that if it had a water content of 8% it would have a thickness of 0.010-0.025 inches, the cooking being sufficient to reduce the water content to below 10%, and comminuting the cooked mixture to give the desired product. The preferred thickening agents are polysaccharide gums, especially carboxymethyl cellulose, guar gum, and sodium alginate.
