Abstract
1293453 Breakfast foods NATIONAL BISCUIT CO 5 March 1970 10642/70 Heading A2B A non-baked, honey-graham flavoured quick-cooking edible cereal product of the kind which requires 1 to 4 mins. cooking, comprises wheat flour selected from whole wheat flour, and or white wheat flour as the only cereal product, and 22 to 30% by weight of sweetening agents. This product may be prepared by mixing sugar, liquid honey, water and salt to form a syrup and adding sodium bicarbonate thereto, blending the syrup with wheat flour until the material has a grey colour, the amount of bicarbonate being sufficient to impart a pH between 6.5 and 8 to the material, cooking the material so that the colour changes from grey to tan, cooling, drying and comminuting. A binding agent such as starch or an edible polysaccharide gum, may be added to the wheat flour prior to the addition of the syrup in the above preparation. The. sugar may be partially replaced by sorbitol and up to half of the honey replaced by molasses, invert syrup and mixtures thereof. The product which preferably has a bulk density of 40 libs./ sq. inch, may be further treated to form a light, highly exanded product by heating and compressing the material, and releasing the material to ambient conditions whereby expansion occurs.
