Abstract

Dry fat emulsion powder.. N5-. consists of 20-40% edible fat, 55-70% sweetening agent, 3-6% protein, 1-9% emulsifier, 1-4% buffer and 0.01-0.06% stabiliser, all calcd. on the wt. of the product. The powders may be used in instant coffee and tea; for raising the fat content of cakes and biscuits and for improving flavour and flow properties of food products.
