Abstract

A process for the simultaneous determination of glucose and fructose in aqueous solutions at a temperature above 20 DEG C. wherein the angle of optical rotation and refractive index of such solutions are measured and the concentrations of the components calculated therefrom in known manner. The measurements may be carried out at a temperature which is the same as or higher than the temperature of the solutions to be tested, using a polarimeter and a refractometer, both having flow-through cuvettes. Such measurements may be evaluated as a nomogram or taken off in the form of proportional voltages which are fed into an automatic computer which can either control a whole plant employed in the separation of glucose and fructose or reproduce a diagram on a multi-colour recording device. The chromatographic separation on an ion exchange resin of invert sugar solutions using the above process to detect the glucose and fructose fractions is described.
