Fermenting; compositions for-making beverages. -In preparing beer of low alcoholic strength, a strong wort boiled with twice the usual quantity of hops is, after fermentation and while in the storage tanks, mixed with a quantity of weak unhopped wort. The mixture undergoes a slow secondary fermentation at a low temperature.
