Abstract

La présente invention concerne un procédé de production d’alcools, selon lequel on introduit un fluide sucré (2) dans une section réactionnelle (1) comprenant un support (4) sur lequel sont immobilisés des micro-organismes, afin de produire par fermentation un moût (3) enrichi en alcools sous l’action desdits micro-organismes, tel que le procédé est opéré en continu, et tel qu’on remplace périodiquement une portion de support usé (41) par une portion de support neuf et/ou régénéré (46).
