Abstract

  These operations are currently carried out, in places not specially equipped for this purpose, on a worktop or in a tray, which does not allow a good oxygenation of the entire piece of meat concerned, nor a rigorous recovery, nor a fortiori an automatic evacuation of exudates, juices or other liquids released by the meat.

  In better equipped structures, the above operations are performed on a carriage having a grid or a perforated plate, on which the meat rest after unpacking. Oxygenation is therefore not optimal on the bearing surface. In addition, the exudates are recovered in a tray mounted in the carriage and which, when full and / or the carriage is moved, overflows.

  The present invention aims to overcome the disadvantages described above.

  To this end, the invention relates to a device for the deconditioning, oxygenation and draining of pieces or pieces of meat packaged under vacuum, characterized in that it consists mainly of on the one hand, by a tray for recovering exudates or other juices released by the meat, comprising at least one outlet connected to a system for collecting or evacuating wastewater, and on the other hand, by a perforated or screened structure located and supported above said tray and, finally, by at least one attachment and suspension structure, direct or via esses, hooks, swing hooks or similar means, for pieces or unconditioned pieces of meat, this attachment and suspension structure extending above the perforated or screen structure and the recovery tank.

  According to the invention, this device 1 is mainly constituted, on the one hand, by a tray 2 for the recovery of exudates or other juices released by the meat comprising at least one flow orifice 3 connected to a collection or disposal system. draining sewage, on the other hand, by a perforated or screened structure 4 located and supported above said tray 2 and, finally, by at least one attachment and suspension structure 5, direct or via of esses, similar hooks, for pieces or pieces of meat unconditioned (e) s, this structure 5 hooking and suspension extending above the openwork structure or screen 4 and the tray 2.

  According to a preferred practical embodiment variant (FIGS. 1 and 2), the perforated or screened structure 4 has a rectangular shape and completely covers the upper opening of the recovery tank 2 (also of rectangular shape), the bottom 2 'of this tray 2 being configured to obtain a natural flow of liquids under the action of gravity towards the orifice or the outlets 3 in the installed state of the device 1.

  In order to optimize the use of the apparent surface of the perforated structure 4 and the tray 2, while maintaining a simple construction, the attachment and suspension structure 5 consists of at least one elongated structure 6, 6 ', rectilinear or not, extending in the longitudinal direction or larger dimension of the recovery tank assembly 2 / mesh or perforated structure 4 and provided with attachment sites 7 distributed along this structure 6, 6 '.

  Said attachment sites may, for example, be in the form of wolf teeth.

  In relation with the aforementioned preferred embodiment, the structure 5 may advantageously consist of at least two bars or rods 6, 6 'situated at different heights with respect to the plane of the mesh or perforated structure 4 and offset with respect to the other in a direction perpendicular to their longitudinal direction of the recovery tank assembly 2 / mesh structure 4.

  According to a characteristic of the invention which emerges from the appended figures, the perforated structure 4 consists of one or more perforated plate (s) 4 'resting on or at the level of the upper edge of the recovery tank 2, the bottom 2' of this the last having optionally a wall inclined to a longitudinal side, along which extends a channel inclined towards the orifice or flow opening 3 on which it opens.

  According to another variant, not shown in the accompanying drawings, the device 1 can also be mounted on a support frame fixed to the ground or mounted on rollers.

  As shown in Figure 1 of the accompanying drawings, a perforated label holder 11 may be provided on one of the side walls of confinement 8, 8 ', 8 ", preferably on the bottom wall 8 opposite the opening of 'access 8' '.
