Abstract
Clarification of fruit juice of apple comprises ultra filtration of the juice obtd. from the pressing. The concentrate retained on the membrane is recovered to obtain the pectins and the juice is directly commercialisable. The process is continuous and enables pectin recovery. Previous treatments destroyed the pectin, required the us of enzymes and gelating and also affected the quality of the juice.
