Abstract

Procédé pour réaliser simultanément la clarification des jus de fruits tels que la pomme et la récupération de leur teneur en pectines, caractérisé en ce que le jus venant du pressage est soumis à une ultrafiltration sur membrane, le jus clair contenant les composés sucrés, aromatiques et les vitamines intactes provenant de cette opération étant directement commercialisable tandis que le concentrat retenu sur la membrane est recueilli en vue de la récupération des pectines qu'il contient
