Abstract

Enveloppe tubulaire pour produits alimentaires dont la surface intérieure est revêtue d'une composition permettant à cette enveloppe de communiquer une couleur fumée, résistant au frottement, à la surface d'un produit alimentaire traité dans ladite enveloppe. La composition de revêtement comprend une albumine et un produit de la réaction d'un sucre réducteur avec un composé amino choisi dans le groupe contenant un amino-acide, un dérivé d'amino-acide et un mélange d'un amino-acide et d'un dérivé d'amino-acide. Domaine d'application : traitement de produits alimentaires.
