Abstract
Méthode pour l'extraction primaire de café torréfié moulu. Le café est d'abord soumis à une extraction avec une quantité de liquide d'extraction aqueux suffisante pour extraire presque toute la matière sèche soluble contenue dans le café, mais qui, de préférence, est insuffisante pour nécessiter une concentration de l'extrait avant sont traitement ultérieur, et on procède ensuite à une extraction des constituants aromatisants hydrophobes à l'aide d'un liquide d'extraction aqueux, après quoi l'extrait ainsi obtenu est soumis à un entraînement dans la colonne 10 pour en séparer ces constituants aromatisants hydrophobes, qui sont obtenus sous la forme d'une solution aqueuse concentrée.
