Abstract
On façonne une protéine de lait de départ en une composition fibreuse que l'on traite dans une solution aqueuse contenant au moins un sel de sodium, de potassium ou de calcium, ainsi qu'un agent de réticulation de type aldéhyde présentant un rapport du poids moléculaire M au nombre des radicaux aldéhydes n de 120 à 360 (par exemple le lactose), à un pH de 2,5 à 6,5 et entre 100 et 140 degrés C, pendant 20 minutes à 3 heures. L'invention s'applique en particulier à l'obtention de produits protéiques fibreux dérivant du lait à usage alimentaire ayant un allongement à la traction élevé (115 à 380 %) et une résistance à la traction appropriée (voir figure) ainsi qu'une excellente stabilité vis-à-vis de la cuisson à l'eau chaude (résistant au traitement dans l'eau chaude à 135 degrés C pendant 4 minutes).
