Abstract

La présente invention concerne un procédé servant à la dégradation enzymatique partielle ou complète d'une substance faiblement moléculaire. Dans ce procédé, on mélange dans un système aqueux polydispersé tel que du lait, des micro-organismes dégradant la substance faiblement moléculaire, on sépare les substances formées pendant le déroulement du métabolisme de ladite substance et l'on ajoute à la solution de départ soit en totalité, soit partiellement, les produits contenus dans la solution résiduelle du système polydispersé. L'invention s'applique à la dégradation de la lactose.
