Abstract

Procédé de fabrication de marrons au naturel. Selon l'invention, les marrons sont stérilisés et cuits sans aucun additif dans des sachets étanches mis sous vide ou sous atmosphère d'azote sous une pression de 0,1 à 0,6 atmosphère. Obtention de marrons au naturel non brisés, ayant un meilleur goût et se conservant plus longtemps après ouverture des sachets.
