Abstract

L'invention concerne un procédé de traitement d'aliments contenant des protéines, en particulier de champignons, destinés à être mis en conserve. Suivant l'invention, on soumet les aliments à un vide de manière à extraire l'air qu'ils contiennent et on remplace l'air ainsi extrait par un liquide naturel, tel que de l'eau pure, le vide étant avantageusement d'environ 500 à 10 torrs, de préférence d'environ 100 à 10 torrs. Le procédé suivant l'invention permet de réduire très sensiblement la perte de poids et de volume que subissent les aliments lors de leur mise en conserve, tout en conservant leurs propriétés organoleptiques initiales.
