Abstract

Sliced vegetables, sesp. potato-chips, are blanched in hot water; slightly fried; drained, and filled into open topped tins, which are then evacuated in a vacuum, pref. 400 mm Hg, and sealed, pref. after injecting e.g. N2, to displace O2. The cans are then sterilised for 10-30 mins at 120-130 degrees C. Contents may be consumed, pref. after completing frying.
