Abstract
In cleaning and skinning vegetable and fruit, the product is placed in a sealed chamber and treated with steam under pressure using an instantaneous reduction in pressure, following treatment, to a value less than atmospheric pressure. The pressure is pref. 0.5 - 8 Kg/cm2 and the treatment pref. lasts for 5-50 secs.
