Abstract

1385303 Debittering soya beans SWIFT & CO 19 Jan 1973 [24 Jan 1972] 2906/73 Heading A2Q The development of off-flavours in legume seeds, eg soya beans, is inhibited whilst maintaining the water-soluble protein content at 45 NSI or more, by exposing whole, full-fat seeds, eg soya beans, is inhibited whilst mainnot been vacuum treated, to saturated superheated steam at a temperature above 212‹F but not above 279‹F and superatmospheric pressure for 10 seconds to 4 minutes until the lipoxidase enzyme activity is reduced below 100 units. The seeds may be heated in an autoclave with agitation and promptly cooled after treatment. The process may be continuous.
