Abstract
1,204,092. Preserving vegetables. F. MOHWINKEL. 3 March, 1969 [9 March, 1968; 21 Aug., 1968], No. 11281/69. Heading A2D. Vegetable produce is preserved by vacuum-packing the produce in non-rigid plastics containers which are then treated in a cooking receptacle with a heating medium while subjected to an external pressure in the receptacle exceeding the internal pressure in the packages and are finally cooled whilst still subject to the higher external pressure. The heating medium may be steam or water, and the higher pressure may be attained by admitting a supply of compressed air to the cooking receptacle. The container may contain several compartments each containing a different type of produce. The preservation of raw peeled potatoes, and raw comminuted carrots is exemplified.
