Abstract
L'invention concerne un procédé en vue d'améliorer l'arôme et/ou la mousse du vin mousseux, du vin champagnisé ou du vin pétillant et des produits ainsi améliorés. Suivant l'invention, au cours de n'importe quelle étape du procédé de préparation du vin, on ajoute au moins un acide aminé, un dérivé d'acide aminé de la thiamine (vitamine B1 ) et/ou du pyrophosphate de thiamine.
