Abstract

Four de boulangerie comprenant une chambre de cuisson, délimitée par une enceinte isolante et susceptible d'être fermée par une porte, un dispositif de chauffage et un dispositif de brassage en circuit fermé destiné à créer et à brasser l'atmosphère de cuisson à l'intérieur de la chambre de cuisson, un dispositif générateur de vapeur, disposé dans la région du dispositif de chauffage et au moins une soupape prévue sur la chambre de cuisson. La soupape 11 est disposée en un emplacement éloigné du dispositif générateur de vapeur 36, 38 de telle manière qu'au moment de la production de vapeur, l'air contenu dans la chambre de cuisson 12 puisse en être expulsé avec le minimum possible de pertes de vapeur et que celle-ci puisse être distribuée uniformément, dans le temps minimal, dans toute la chambre de cuisson.
