Abstract

1476119 Food treatment MUVERO BV 14 June 1975 25501/75 Heading A2D An apparatus for the heat treatment, particularly the smoking of foodstuffs, comprises a food treatment chamber, the side walls of which chamber have openings formed therein, whereby the chamber is connected via a first side wall with a supply chamber and via a second side wall with a discharge chamber, the supply and discharge chambers being connected via an air circulation blower, means being provided to heat the circulating air and to introduce steam or smoke to this air, the openings of the side walls being formed as nozzles of a polygonal or circular cross-section, the nozzles being distributed over the whole area of the walls so that a uniformly distributed transverse flow is attained over the whole width and height of the treatment chamber. The nozzle openings may be of variable cross-section as indicated in Fig. 2 (not shown). As indicated in Fig. 3, an apertured plate 20 may be provided adjacent a side wall 6 which is provided with nozzles 16, which plate is displaceable relative to the side wall to provide additional regulation of the air flow through the nozzles. The supply and discharge chambers may be provided with spray nozzles 18 (Fig. 1, not shown) to facilitate the cleansing of the apparatus.
