Abstract

L'invention concerne un perfectionnement à l'obtention de cultures bactériennes pouvant servir en fromagerie. On prépare des cultures bactériennes concentrées, pouvant directement servir (sans nécessiter le passage par l'étape du levain) à inoculer des cuves de lait, en centrifugeant, après sa fermentation, une culture comportant en dissolution certains polyphosphates. Le procédé donne un pourcentage supérieur de récupération des cellules bactériennes et un produit à plus grande concentration en ces cellules, pouvant servir en fromagerie.
