Abstract

The appts., in the form of a preserving pan, is covered by a lid. The upper edge of the container is provided with a peripheral sealing joint. The inner face of the lid rests on this joint and is kept in position by elastic clips. Only when the interanl pressure exceeds a non-admissible amt. do the clips, acting as a safety valve, give way slightly until the pressure comes down to the desired level. The bearing ledge carries a movable dish with a grid to support the prod. to be smoked. The wood chips. or sawdust, are spread over the base of the container above the source of heat, such as a spirit lamp. Any liq. escaping during the smoking process is collected in the dish; some is vapourised and helps to raise the pressure in the container. Not only is it possible to smoke a prod. in a small container but improved results are obtd. The smoke producted is totally absorbed by the prod. so that the process can be operated in a closed room, such as a restaurant or a private house.
